I honestly consider that ice cream should be a food group of its own! Just think about it: creamy, delicious, and refreshing and in so many flavors! Rich in calcium (if not vegan) and a decent amount of protein! Why on earth it’s not calorie free? Well, maybe this is a good thing, otherwise I would survive only and ONLY on ice cream!
Since it is so warm and nice outside, I decided to celebrate my addiction with a Vanilla Raspberry ice cream! And, you know what’s even better? You don’t need an ice cream maker for this recipe! I almost forgot to mention, this ice cream is made with great yogurt, and is very bikini friendly, so you can have it as a nice refreshing snack by the pool!
Ingredients:
- 500g fresh raspberries
- 400g greek yogurt
- 1 tbsp vanilla extract
- 2 tbsp raspberry liqueur
- 2 egg whites
- 100g powdered sugar
Directions:
In a mixer on medium speed, combine the yogurt and sugar, followed by the egg whites. Mix in the vanilla extract, raspberry liqueur and fresh raspberries. Transfer the mixture into an airtight container and refrigerate for 4 hours. Scoop and serve!

What a beautiful color! I love that you just made this with greek yogurt, does it have more of a texture like ice cream or sorbet?
I would say that its somewhere between, not as creamy as ice cream, but not as icy as a sorbet! More like a low fat ice cream!
