I present you with the most delicious energy ball that I have ever tasted! Yesterday after I came home from a make-up lesson at DEX New York, it was already 9PM and I realized that I have no time left to squeeze in my workout so feeling extra motivated I started brainstorming what recipe I can make that will taste like a chocolate truffle but will pass the test to go as breakfast!!!?? I found in the pantry some Artisana Raw Chocolate Coconut Butter and I started combining ingredients praying that it will work! Oh, and it did, my husband had one and he loved it! The texture is amazing, so creamy and smooth from the coconut butter, the oatmeal doesn’t even taste like oatmeal, more like rice krispies, and the pumpkin seeds add extra crunchiness.
- 2 packages of sugar free instant oatmeal
- 1/2 cup pumpkin seeds
- 4 tbsp Raw Chocolate Coconut Butter
- 2 tbsp Raw Cashew butter
- 2 tbsp Agave
- 4 tbsp shredded coconut
- cocoa powder
Combine all the ingredients in a bowl and refrigerate for 10 minutes before forming the balls. Form the balls the size you like, and dust them with cocoa powder. Refrigerate for at least 1 hour before serving. Store in the refrigerator since the coconut butter tends to soften once at room temperature.
