Chicken Salad with Prunes and Walnuts

Hi friends, its Wednesday, I love this day of the week, you know the count down to the weekend starts, and everyday brings me closer to our vacation in Mexico! I do have an interesting and easy recipe for you today! A chicken salad, not your regular chicken salad that you get for lunch that can sometimes be boring, this one is very flavorful, the walnuts add some extra protein and a nice crunch, and the prunes add the right amount of sour and sweet at the same time. This salad is elegant and will be a nice addition to any party, it can be served as an appetizer too with blue core chips on the side!

Chicken salad with prunes and walnuts

 Ingredients:

500 gr organic lean chicken meat

6 organic hard-boiled eggs

80 gr of walnuts

100 gr of prunes (I used California Sun Maid brand)

3 garlic cloves minced

2 tbsp vegetable oil

4 tbsp low-fat mayo

Cut the chicken and prunes in small pieces, add the rest of the ingredients, mix, refrigerate for one hour. When serving add come cilantro on top.

  1. Meat salads are great for low carbers, like myself, but I usually just stick with the same old, same old. This looks so refreshing and new. I have never seen these ingredients together before and will have to try it.
