Hi friends, its Wednesday, I love this day of the week, you know the count down to the weekend starts, and everyday brings me closer to our vacation in Mexico! I do have an interesting and easy recipe for you today! A chicken salad, not your regular chicken salad that you get for lunch that can sometimes be boring, this one is very flavorful, the walnuts add some extra protein and a nice crunch, and the prunes add the right amount of sour and sweet at the same time. This salad is elegant and will be a nice addition to any party, it can be served as an appetizer too with blue core chips on the side!
Ingredients:
500 gr organic lean chicken meat
6 organic hard-boiled eggs
80 gr of walnuts
100 gr of prunes (I used California Sun Maid brand)
3 garlic cloves minced
2 tbsp vegetable oil
4 tbsp low-fat mayo
Cut the chicken and prunes in small pieces, add the rest of the ingredients, mix, refrigerate for one hour. When serving add come cilantro on top.
Question: Do you like chicken salad? What ingredients are you adding to make it more special?

I like to add chopped celery into chicken or tuna salads!
I like the addition of celery too!
I love chicken salad/tuna salad/turkey salad/etc, but I hate how sooooo many places add too much mayo. Grosssss. Yours, on the other hand, looks amazing.
I don’t like the mayo abundance as well!
I used to eat it all the time. I love adding apples to mine. Or pickles and mustard. Anything as long as it’s not drowning in mayo!
Beautiful plating here!
I like to add pickles as well!
oh lovely combination! walnut, chicken and prunes, surely an interessting change of the usual salads out there.
Thanks Helene!
is it just me? or are prunes awesome. this sounds great!
I like prunes very much
Off to Mexico! I would love to go to Mexico. What a great looking salad and I love the way you presented it.
Thanks!

I like adding grdapes too!
Beautiful photo! I like to add almonds to my chicken salad.
Thanks Melissa!
Well…I’m a vegetarian and thus cannot say that I am a huge chicken salad fan but I really want to try this using chick peas instead of the meat! I LOVE the idea of adding prunes!!! They are so underappreciated…
I think chick peas will be really good instead of chicken!
I love chicken salad! Especially with some blue cheese, walnuts, and cranberries
Meat salads are great for low carbers, like myself, but I usually just stick with the same old, same old. This looks so refreshing and new. I have never seen these ingredients together before and will have to try it.
The combination is great, give it a try and let me know if you like it!
I did give this a try and it was great. I’ll be posting a pic tomorrow
I am so excited, I can’t wait to see it!!!!
