Hi guys, how is your Wednesday treating you so far? I love when the Monday’s are off so many things get done, like this beautiful and delicious Crepe cake – my husband’s favorite, I made it on Monday, and we have only one slice left! The cake is very delicious and light, looks very nice as well.
The cake is easy to make, here are the ingredients for the Crepes probably later I will make a video on “How to make Crepes”:
- 1 1/2 cup of flour
- 3 eggs
- 420 ml 2% fat milk
- 1 tbsp vanilla extract
- 2 tbsp canola oil
- 1/2 tbsp sea salt
- 5 tbsp of powdered sugar (depends how sweet you want the crepes)
- 1 1/2 can of Sophie’s sour cherries
In a bowl combine the eggs and the sugar, when incorporated add the vanilla and the sea salt. Add the flour and mix with a hand mixer until a paste forms, add the milk little by little and mix, add the oil. It is very important to use a good non stick pan, I use Ogreenic and it works amazing, no oil is needed for greasing. The pan has to be very hot, cook the crepes on medium.
To flip the crepe I use a small wood stick to get one edge and turn it on the other side using my fingers.
After the crepes are done cover them with a towel and let them cool, prepare the cream by mixing:
- 2 cups creme de frache or sour cream, I used sour cream
- 1 cup powdered sugar
Put it in the fridge for at least 15 minutes.
For the filling I use pitted sour cherries, at home we make our own, here I use Sophie’s Sour Cherries, they are really good. Following the steps in the below pictures roll your crepes for the cake in a “tube” form, and layer them in a glass dish, each layer is covered by cream.
So for the first layer I used 6 crepes, for the second 5 crepes and for the third 4 crepes. The cake can be decorated with cocoa powder and I usually grate some chocolate on top, but I didn’t have any on hand this time. As I said before this cake is delicious, and very beautiful when you cut it you can see all the tubes filled with cherries. The cream is sweet, the crepes are silky and smooth and the sour cherries add the right tartness, you will go back for seconds, believe me!

My boyfriend makes crepes every so often but we keep it simple just some brown sugar or marmalade.
marmalade is really good on them, especially I like mango or strawberry!
LOVE Crepes- they remind me of my childhood, my mom would make them for my brother and I all the time! We would top them with powdered sugar and fresh chopped strawberries! Oh so good- makes we want to make them for old times sake!
Thats one of the reasons I like crepes, they are part of my sweet childhood memories, like a soft blanket of love, since my family is on another continent!

This looks exquisite! I’ve only ever had one crepe cake in my life and they were just layered flat on top of one another. I can only imagine the divine texture of having them wrapped up with those cherries. YUM!

I love crepes, we always used to have them with lemon juice and sugar, which is delicious – but I love the idea of making a cake out of them, it sounds great!

I’ve made (and love) crepes but have never attempted a crepe cake before!! A crepery in my town has a savory crepe cake on the menu but I’ve never ordered it before because I’m not thrilled by the fillings.

I grew up on crepes, so I instantly got sucked in to your post. Just like Sylvia ahead of me, I have never seen a crepe cake and I’ve got to tell you, I think this is very clever! My husband makes crepes alot for he & I, & when we have overnight company, he always makes them then too in the morning for breakfast. We never have complaints, only if we run out of crepes. Everyone loves them. We put Nutella with bananas for the grandchildren & they love it that way. We also have put strawberries (he makes a sauce) on them with whipped cream on top & we’ve had blueberries (that’s my favorite) peaches, berries, canned cherries & I make an apple pie filling (can it in jars) that we don’t use for a pie, but we do use it for the crepes. That is excellent, we warm the apple filling & it is absolutely yummy. I like the cake you made & we will definitely try it.
